Coriander honey is made from the nectar from cilantro plant. Dry field grass and peppery spice notes are the immediate flavors of this honey. It can get a little savory and tart on the finish in its raw form. The process of caramelizing the honey is time intensive and the base for the mead style called Bochet, a burnt honey mead. Heating the honey brings out notes of burnt sugar, caramel and molasses. The time spent in barrel accentuates those sweet baked pie flavors. That caramelization creates some unfermentable sugars that can give mead a dry finish and maintain a palatable level of sweetness. This honey was sourced from Flying Bee Ranch Apiary, who supplied several varietals of caramelized honey to local mead makers. As a long time mead maker, Lee was intrigued about what a barrel could accentuate in the aging, if those caramel and brown sugar flavors were already present in the honey. In order to keep the coriander notes strong and Lee drew on her distillation background and experimented with creating a flavor extract of coriander to season the barrel before adding the honey.
